Tuesday - - Corn on the Cob and Chicken Pot Pie
INGREDIENTS:
Mix soup 1/4 cup milk, pepper, chicken and veggies in 9 inch pie plate. Mix remaining milk, egg and making mix. Pour over chicken mixture. Bake 30 minutes or until top is golden brown.
- I can Cream of Potato Soup
- 3/4 cup milk
- 1/8 tsp. ground pepper
- 1 cup mixed veggies
- 2-3 chicken breasts, cooked
- 1 egg
- 1 cup pancake/baking mix
Wednesday - - Taco Salad
Thursday - - Chicken, Rice, and Corn on the Cob
Friday - - Potato-Veggie Frittata
2 T vegetable oil
1 small onion, peeled and chopped fine
1 pound small new potatoes, cut into quarters and parboiled
1/4 tsp salt
1/8 tsp black pepper
8 large eggs
1/4 cup grated Parmesan cheese
1/4 tsp dried rosemary
1 cup mixed veggies (broccoli, carrots, mushrooms...)1/4 pound sliced ham, chopped
1/2 cup shredded mozzarella cheeseHeat oven to 375 degrees. In a 12-inch nonstick skillet with oven-proof handle heat oil over medium-high heat. Add onion; saute 2 minutes. Add potatoes, salt and pepper; cook, stirring occasionally, 10 minutes.
In medium bowl, with whisk, lightly beat eggs, Parmesan cheese, and rosemary. Stir egg mixture
and chopped haminto vegetables; cook 3 minutes. Place in heated oven; bake 10 minutes. (I find it needs a bit more time.) Sprinkle top with mozzarella cheese. Bake 5 minutes more until egg is set and cheese is melted.
Saturday - - STATE FAIR DAY - No menu needed as I'm sure we will eat plenty at the fair! What is your favorite fair food?
Sunday - - White country gravy with sausage over potatoes with a side of pancakes

ReplyDeleteMy favorite fair food is junk stuff (popcorn, corndogs, nachos). We were going to hit the fair on Tuesday but decided it was going to cost to much ($12 each plus $10 parking). Have fun!

ReplyDeleteHmmmm favorite state fair food ... Probably gonna be roasted corn. We usually get a funnel cake too.
Good luck with your tomatoes and cucumbers! One of my favorite things to do with cucumbers is to make what we call "Refigerator Pickles" Just slice up about 3 or 4 cucumbers in a large bowl. Add a couple slices of onion (to taste). Then, add about 1 cup of vinegar about 1/4 to 1/2 cup of sugar, 1/2 to 1 cup of water. (Depends on how strong and sweet you like them to be). Add just black pepper to taste. Let set overnight in the fridge. Yum!!!
Oooh, I'm so proud of you for doing this! I just posted about a week's worth of posts to my blog (read and find out why they were missing!) and did my menu planning for this week. I so wanted corn on the cob but it wasn't on sale this week. :(
