INGREDIENTS:
- 1 pound lean or extra-lean ground beef
- 1/2 pound bulk Italian sausage (or remove from casings)
- 1/3 cup fine dry bread crumbs
- 3 medium cloves garlic
- 1 scant teaspoon salt
- 1 teaspoon dried leaf basil
- 1 medium onion, finely chopped
- 1 large egg
- 1/3 cup grated Parmesan cheese
- 2 tablespoons water, or as needed
- 1/8 teaspoon ground black pepper
PREPARATION:
Line a large shallow baking pan with foil; oil lightly. Combine all ingredients, using just enough water to moisten. Shape into meatballs, about 1 1/2 to 2 inches in diameter.Broil the meatballs about 8 inches from the heat source for about 10 minutes.
Turn and broil for 10 minutes longer.
Put the meatballs in a large saucepan and cover with your favorite pasta sauce, homemade or purchased. Cover and simmer for 20 to 30 minutes.
Serves 6 (about 18 to 24 large meatballs).

(I believe this recipe came from a canned soup label awhile back!)
INGREDIENTS:
Mix soup 1/4 cup milk, pepper, chicken and veggies in 9 inch pie plate. Mix remaining milk, egg and making mix. Pour over chicken mixture. Bake 30 minutes or until top is golden brown.

- 3/4 cup milk
- 1/8 tsp. ground pepper
- 1 cup mixed veggies
- 2-3 chicken breasts, cooked
- 1 egg
- 1 cup pancake/baking mix
Thursday - - Tilapia and rice
Friday - - Leftovers

Sunday - - Something with canned tuna -- we have a ton of it, but I haven't found any fun new recipes... any ideas?

I always do a tuna salad sandwich with tuna, so I'm no help. The yogurt glazed chicken sounds good.
ReplyDeleteSounds great! Well, except for the tilapia. Not a fish/seafood person. So I can't help you with your tuna situation. I do have a GREAT recipe for chicken pot pie that I got from my aunt when I had baby #2 and had no idea how I was supposed to care for 2 kids AND cook. I will have to post it. It is delish! You might even be able to use tuna as a tuna casserole/pot pie kind of thing!
ReplyDeleteI used to make tuna salad with mostly veggeis (carrots, cucumbers, avacado whatever I had) and seasonings like lemon pepper. I should do that again, it would be good for the kids and I.

ReplyDeleteTuna salad...8 oz pasta--cooked, 1 can of tuna, 2 stalks of chopped celery, 2 tbsp minced onion, 1 cup of frozen peas--thawed but not cooked, 3 chopped boiled eggs, and dressing. Dressing is a mixture of 1 c Miracle Whip, 1 tsp mustard, 2-3 tbsp pickle juice, 1 tsp salt, 1/2 tsp pepper, 1 tsp sugar, and enough milk to thin out the M Whip a little. Mix half of it into the pasta/tuna mix, and keep adding until the salad is moist (but not soupy).
Tilapia sounds yum :) I love tilapia! The yogurt chicken sounds good too!
